Dehydrating Limes
Wash the limes and then Slice them in thin slices. I like using a hand held slicer. The only drawback with this is that sometimes the final cut is not all the way through the lemon and you need to take it out of the slicer and finish it.
Load The Dehydrator trays
With limes it does not matter if the sllices touch each other, just do not overlap them.
Time and Temp
Drying time will vary and I dried the limes at 135 degrees. Check them every few hours until done. I am making powder out of these limes so I want them “rock” hard before I place them in my grinder. My grinder is actually a blender.
Grinding
Once the limes are cool and dry, you can then grind them in the blender. I fill my blender aobut half way and then will pulse the unit until pulverized.
Moisture
If perchance the limes still have moisture in them, place them back in the dehydrator.
Lime Powder
Once all of the limes are ground, the powder will look like this. Lime powder is great for making lime-aid. Add it to water and add your sugar or stevia over ice and you have a nice cool drink on a hot day
Storing
I store my powders in mason jars. Besure to label and date your produce and vacuum seal. You can also add a desiccant pack to the jar to help with any moisture.
