Nothing says summer like zucchini. And there is nothing better than zucchini sauteed in real butter. Slice it about 1/4 inch and get the pan ready! Simple, yet fit for a King!

8-8-19 – Today I decided to try making zucchini chips in my dehydrater.
Ingredients
- One good size zucchini
- Spray Olive oil (Pam)
- Flavoring – (Cheddar butter) or whatever flavor you prefer.
Instructions:
Slice
Slice the zucchini into 1/4 inch thick slices. I like to use a mandolin slicer with a catch box undert the slicer but I found my mandolin slicer slices them too thin because when I got done dehydrating the centers of the chips were stuck to the liners so I thik they need to be sliced a little thicker.

Place
Place the sliced zucchini on to a dehydrator tray. Try not to overlap them.
Spray
Using a spray olive oil, spray each of the slices on the top side only. You can use a brush to brush the oil on if you do not have the spray oil.
Sprinkle
After oiling the tops of each slice sprinkle the flavoring of your choice on the opne side of the chip.
Flavors
You can use a popcorn flavor like I have or you can flavor your chips to taste using whatever herb flavor you prefer.
Sprinkle
Sprinle a light dusting of the flavoring on your chips. Be sure your chips are spaced so that they are not seriously overlapping. I had some slices come out of my slicer in half wheels and they filled the dehydrator quite well with the full wheels. YOu of course, do not have to use any flavoring at all.
Turn On
Stack and turn your dehydrator on at 135/145 degrees and watch your time at 3 hours. They can take upto 12 hours or longer. I find my machine works better at 145 degrees.
Finish and Store
Gently remove the chips from the trays and place thme in your container. This load took 15 hours to dehydrate. Place chips in a air tight container and store in a cool dark place. (Note: If you are like us, they will not stay in that container too long!)
Finish
These chips are yummy and so easy! The only thing bad about them is they go fast and the dehydrator is not large enough to make more. And if sliced to thin, the middles will crack out. The middles cracking also depends on maturity of the squash. (Note to self: Order more stack trays for the dehydrator.. or perhaps get another dehydrator!)
Clean up
On thing I did not care too much for was the clean up. Seems the centers fell out. Perhaps slicing them a little thicker mioght help, but if your zucchini is a tad on the hollow side expect a little waste that will stick to the trays. Cleanup is easy though, just wash the trays in warm soapy water.
Tip
Literally, I find that if you tip your stack tray over another one and then take a knife and gently tap on the trays, the chips will easily pop off and they do nt break as easu as trying to use a spatula to remove them. I use a Nesco Pro Dehydrator and this works really well!
Let The Chips Fall
Let the chips fall where they are on another tray and you are good to go to storage.
Size Reduction
One of the great things about dehydrating the food we love is that it also reduces storage space so where 5 good size zucchine would hav etstood before me, 2 quart jars have taken their place, pluse the fact that now I have zucchine that will last longer, be able to do more things and provide a nutritios meal as all the vitimins in dehydrated foods are preserved. Be sure to date and label your containers. I like using Mason jars becasue I can see in the jar. Be s ure if you are using Mason jars, sore your finished produce in a cool dark place.
Beautiful
Aren’t these jars just beautiful! Your pantry will be awesome come end of harvest. You can also recycle those store bought herb containers that you had to get before you started dehydrating, but for bulk storing, I believe that the Mason jar is the only way to go!
